7 Layer Sweet Potato Dip


Ingredients

Sweet Potato Layer:

  • 2 large Organic Bako Sweet Potatoes 

  • 1 tablespoon olive oil 

  • 1 small yellow onion, finely diced 

  • 3 cloves garlic, minced 

  • ½ cup vegetable broth 

  • 1 tsp cumin 

  • 1 tsp paprika 

  • Salt & pepper to taste 

7 Layer Dip:

  • 1 cup plain Greek Yogurt 

  • 1 tablespoon taco seasoning 

  • 1 cup guacamole 

  • 1 cup shredded cheese 

  • ⅔ cup pico de gallo 

  • ½ cup green onions, sliced 

  • ½ cup cilantro, chopped 

 

Directions

  1. Pierce sweet potatoes with a fork, then place in microwave. Microwave on for 4 minutes, turning halfway through, then microwave for another 4 minutes, until sweet potato flesh is soft and fully cooked. Set aside to cool for a few minutes. 

  2. While sweet potatoes are cooking in the microwave, add olive oil, onions, and garlic to a large skillet over medium heat. Sauté until onions and garlic are soft and fragrant, about 10-12 minutes. Add the vegetable broth as needed to de-glaze the pan and help onions soften. 

  3. Once sweet potatoes are slightly cooled, slice each potato down the middle and scoop out the flesh. Add the cooked sweet potato flesh to the skillet and gently mix with the onions and garlic until well combined. 

  4. Add cumin, paprika, salt, and pepper. Mix until well combined. Add another splash of vegetable broth if needed. The mixture should be the consistency of refried beans. Set aside to cool. 

  5. Meanwhile, in a small bowl, mix taco seasoning and Greek yogurt. Whisk together until well combined. 

  6. Assemble the dip! To the bottom of a glass dish or bowl, add the sweet potato mixture. Next, add the seasoned Greek yogurt, guacamole, shredded cheese, pico de gallo, green onions, and cilantro. 

  7. Enjoy with tortilla chips!
