BBQ Chicken Sweet Potato Bowl
This BBQ Chicken Sweet Potato Bowl includes a combination of grilled barbecue chicken, creamy coleslaw, and Bako Sweet Potatoes! These naturally sweet, vibrant potatoes are packed with fiber, and vitamins A & C making this meal as nourishing as it is satisfying. And can we talk about how beautifully they caramelize on the grill?!

Ingredients
2 boneless skinless chicken breasts
½ cup barbecue sauce, divided (your favorite brand)
2 Bako sweet potatoes, peeled and sliced into wedges
2-3 tablespoons olive oil
2 cups premade coleslaw
Salt/pepper to taste
1 teaspoon dried parsley
Optional: fresh parsley for garnish
Directions
Preheat grill to medium heat. Drizzle the sweet potato wedges with olive oil and season with salt, pepper, and dried parsley. Place the sweet potatoes on the grill and cook on each side for about 5 minutes or until the sweet potatoes are tender and slightly charred.
Brush chicken with half of the barbecue sauce and place on the grill. Cook for about 6-7 minutes each side, or until the internal temperature reaches 165F. Set aside to rest.
To assemble the bowls, divide the coleslaw, sweet potatoes, BBQ chicken evenly among 2 bowls. Drizzle remaining barbecue sauce over each bowl and garnish with fresh parsley if desired. Enjoy!
