Ingredients
Grilled Sweet Potato Wedges
3 Bako Sweet potatoes, cut into wedges
1 tbsp olive oil
1 ½ tsp kosher salt
1 tsp garlic powder
½ tsp onion powder
1 tsp paprika
Caramelized Onion and Mushrooms
1 tbsp olive oil
½ large yellow onion, diced
1 ½ cups sliced shiitake mushrooms
1 tbsp low-sodium soy sauce
1 tsp maple syrup
¼ tsp liquid smoke
Burger Sauce
½ cup non-fat, plain Greek yogurt
¼ cup ketchup
2 tbsp dijon mustard
½ tsp paprika
½ tsp kosher salt
Water to thin

Sliced green onion
Directions
Start by making the caramelized onion and mushrooms. Heat oil in a medium skillet over medium-high heat. Add onion and mushrooms and saute for 4-5 minutes until onions are soft. Turn heat to medium-low and cook for 30-35 minutes until onions are deep golden brown. Stir in soy sauce, maple syrup, and liquid smoke. Remove from heat and set aside.
Add sweet potato wedges to a large bowl and toss with oil, salt, and spices.
Preheat the grill to medium-high heat. Arrange the sweet potatoes on the grill, cut side down. Grill for 8-10 minutes per side until fork-tender.
Meanwhile, make the sauce. Whisk together all ingredients until creamy, adding water as needed to make it a drizzable consistency.
Serve wedges on a platter. Drizzle over burger sauce and top with caramelized onion and mushrooms, and sliced green onion. Enjoy!
