Shepherd’s Pie

Ingredients
2 Tbsp olive oil
2 zucchinis
1/2 yellow onion (diced)
2 minced garlic cloves
1 lb ground beef
1 package taco seasoning
1 cup shredded cheese

Directions
Start by dicing your sweet potato and zucchini, and setting them to the side.
Grab a large skillet and add 2 tablespoons of olive oil along with your diced onion and minced garlic. Sauté this for five minutes before adding in your ground beef and taco seasoning.
Cook until your ground beef is completely cooked through, then add in your sweet potato and zucchini.
Allow all your veggies and meat to cook together in your skillet for 10 minutes, then transfer it to a oiled 9 x 11 baking dish.
Top with cheese and place in the oven on 400F for 45 minutes. Enjoy!
