Super Green Goddess Salad
This salad is loaded with veggies, flavor, and texture and the best part is undeniably the roasted Bako Sweet potatoes. Not only are sweet potatoes delicious, but they are great for heart health because they are rich in fiber, antioxidants, vitamins, and minerals.

Ingredients
Dressing:
1 ½ cups mayonnaise
¼ cup Greek yogurt
½ tbsp. lemon juice + zest
½ tbsp. olive oil
½ tsp. white wine vinegar
⅓ cup mixed herbs: dill, basil, cilantro, parsley, chives
1 clove minced garlic
Salt and pepper
Dash of hot sauce
Salad:
1 can chickpeas, drained and rinsed
2 Bako Sweet potatoes, roasted
1 large carrot, peeled and sliced into rounds
2 cups roasted broccoli
1 cup shredded purple cabbage
½ cup chopped almonds
3 cups baby spinach
3 cups shredded kale
Directions
Dressing:
Add all dressing ingredients to a blender or food processor until combined. Taste and adjust seasonings.
Salad:
Combine all salad ingredients in a large bowl and toss with the green goddess ranch dressing.
