Sweet Potato & Pancetta Flatbread

Ingredients

  • 2 pieces full size naan bread (Starting with store bought naan bread makes this recipe quick and easy. Serve as an appetizer or a light lunch or dinner.)

  • 1/2 cup shredded naturally smoked Gouda cheese*

  • 4 oz. fresh mozzarella cheese, torn into pieces

  • 5 thin slices pancetta

  • 20 thin slices peeled BAKO Sweet Potatoes, about 1 1/2 inches round

  • 1/4 cup thinly sliced shallot rings

  • Grated Parmesan cheese and snipped fresh basil

*Naturally smoked Gouda will have a light golden brown edge and a creamy yellow center. 

 

Directions

  1. Preheat oven to 450°F and line a large baking sheet with parchment paper.

  2. Place naan bread pieces on baking sheet and sprinkle with Gouda and mozzarella cheeses.

  3. Separate pancetta slices and place in a single layer on a large microwave-safe plate. Cover with paper towels and microwave on HIGH for 2 1/2 minutes or until crisp.

  4. Remove and place sweet potato slices on the same plate, covering again with paper towels. Microwave on HIGH for 1 minute.

  5. Flip and cook for 1 minute more.

  6. Place shallots over cheese and top with sweet potato slices.

  7. Break pancetta into pieces and sprinkle over the top.

  8. Cook for 10 to 12 minutes or until cheese is melted and lightly browned on the edges.

  9. Sprinkle with Parmesan and basil.
