Buffalo Chicken Bites

Ingredients
1 large Organic Bako Sweet Potato
1 tbsp olive oil
¼ tsp garlic powder
Salt & pepper to taste
½ cup shredded cheese
1 heaping cup shredded rotisserie chicken
½ cup Buffalo Sauce
½ cup light sour cream
2-3 tbsp chives
Directions
Preheat oven to 400 degrees
Slice sweet potato into rounds, about ¼ inch thick
Add sweet potato rounds to a large bowl, then toss with olive oil, salt, pepper, and garlic powder
Arrange rounds in a sheet pan in one even layer, then bake until tender, flipping halfway through, about 10-15 minutes.
While sweet potatoes bake, make buffalo chicken mixture. Add shredded chicken to a bowl and mix with buffalo sauce.
Once the sweet potatoes are roasted, top each round with a sprinkle of shredded cheese, and let melt.
Next, top each round with buffalo chicken, a dollop of sour cream, and chives. Serve with carrots, celery, ranch, and enjoy!
