Sweet Potato Crackers

Ingredients

Crackers:

  • 1 Organic Bako Single Sweet Potato (1⁄2 cup flesh)

  • 1 cup sharp cheddar cheese, shredded

  • 2 tablespoons unsalted butter, melted

  • 1 teaspoon salt

  • 1 teaspoon onion powder

  • 1 teaspoon garlic powder

  • 1⁄2 teaspoon paprika

  • 1 1⁄2 cups all-purpose flour

Directions

  1. In a large bowl, combine sweet potato, cheddar cheese, melted butter, sea salt, onion powder, garlic powder, paprika and flour in a food processor.

  2. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes

  3. Preheat oven to 350°F (175°C)

  4. Lightly flour a rolling pin and the surface of parchment paper. Roll the dough out on the parchment paper to approximately 1/8 inch thickness.

  5. Using a heart-shaped cookie cutter, cut out the crackers. Gather any scraps and re-roll to cut out more shapes.

  6. Transfer the crackers to a parchment-lined baking sheet, ensuring they are not touching.

  7. 7. Bake for 25-30 minutes, or until golden brown, slightly puffed, and browned on the edges. Rotate the pan halfway through baking.

  8. 8. Cool completely on the baking sheet before serving.
