Sweet Potato Patties
Crispy on the outside, soft on the inside, and paired with the dreamiest whipped feta dip—these Sweet Potato Patties should be your new go-to!

Ingredients
Patties:
1 Bako Single Sweet Potato (steamed then mashed)
1/2 cup breadcrumbs
1/4 cup finely chopped white or red onion, finely chopped
1/4 cup fresh chopped cilantro
1/4 cup crumbled feta cheese
1 large egg
1 tsp minced garlic
1 tsp ground cumin
1/2 tsp paprika
1/2 tsp coriander
Salt and pepper, to taste
Olive oil spray
Whipped Feta:
1/2 cup feta cheese
1/4 cup Greek yogurt
1 tbsp olive oil
1 tbsp lemon juice
1 tsp honey
1 small garlic clove, minced
Black pepper, to taste
Directions
Add all ingredients to a large bowl and mix until combined. Form into 8 - 2 inch patties.
Spray with cooking spray on both sides and add to a parchment lined sheet pan or air fryer basket.
Bake at 400F for 20-25 mins or air fry at 400F for 10-12 min.
Blend whipped feta in a food processor and serve with patties.
