Sweet Potato Patties

Crispy on the outside, soft on the inside, and paired with the dreamiest whipped feta dip—these Sweet Potato Patties should be your new go-to!

Ingredients

Patties:

  • 1 Bako Single Sweet Potato (steamed then mashed)

  • 1/2 cup breadcrumbs

  • 1/4 cup finely chopped white or red onion, finely chopped

  • 1/4 cup fresh chopped cilantro

  • 1/4 cup crumbled feta cheese

  • 1 large egg

  • 1 tsp minced garlic

  • 1 tsp ground cumin

  • 1/2 tsp paprika

  • 1/2 tsp coriander

  • Salt and pepper, to taste

  • Olive oil spray

Whipped Feta:

  • 1/2 cup feta cheese

  • 1/4 cup Greek yogurt

  • 1 tbsp olive oil

  • 1 tbsp lemon juice

  • 1 tsp honey

  • 1 small garlic clove, minced

  • Black pepper, to taste

 

Directions

  1. Add all ingredients to a large bowl and mix until combined. Form into 8 - 2 inch patties.

  2. Spray with cooking spray on both sides and add to a parchment lined sheet pan or air fryer basket.

  3. Bake at 400F for 20-25 mins or air fry at 400F for 10-12 min.

  4. Blend whipped feta in a food processor and serve with patties.
