Sweet Potato Lox Toast
These delicious toasts are packed with heart-healthy nutrients, including omega-3s from the salmon and potassium from the sweet potatoes.

Ingredients
Low-fat cream cheese, to taste
English cucumber, sliced
4oz smoked salmon
Red onion, to taste
Dill, to taste
Directions
Slice 3 sweet potatoes into 6 even “toast” rounds and bake at 400°F for 30-35 minutes.
Once crispy, top with low-fat cream cheese, 1/2 english cucumber slices, 4 oz of smoked salmon, and red onion and dill on top.
