Sweet Potato Lox Toast

These delicious toasts are packed with heart-healthy nutrients, including omega-3s from the salmon and potassium from the sweet potatoes.

Ingredients

  • 3 Bako Sweet Potatoes

  • Low-fat cream cheese, to taste

  • English cucumber, sliced

  • 4oz smoked salmon

  • Red onion, to taste

  • Dill, to taste

Directions

  1. Slice 3 sweet potatoes into 6 even “toast” rounds and bake at 400°F for 30-35 minutes.

  2. Once crispy, top with low-fat cream cheese, 1/2 english cucumber slices, 4 oz of smoked salmon, and red onion and dill on top.
