Sweet Potato Coin Sliders

Ingredients
2-3 large Bako sweet potatoes, peeled & sliced into 20 rounds (about ½-inch thick)
Avocado oil spray
Salt + black pepper
1 lb grass-fed ground beef (80/20 blend)
1 tsp salt
½ tsp black pepper
1 tsp garlic powder
1 tsp onion powder
Toppings
Lettuce
Tomato slices
Guacamole
Burger Sauce
¼ cup Greek yogurt
2 Tbsp ketchup
1 Tbsp yellow mustard
Pinch of salt, pepper, garlic powder & onion powder
Directions
Preheat oven to 400°F. Place sweet potato rounds on a baking sheet, spray with avocado oil, and season with salt + pepper. Bake for 25–30 minutes, flipping halfway, until tender.
Mix beef with salt, pepper, garlic powder & onion powder. Form into 10 mini patties.
Cook patties in a skillet or grill pan for 3–4 mins per side, or until cooked.
Stir together Greek yogurt, ketchup, mustard & spices for burger sauce.
Assemble sliders: sweet potato round → lettuce, tomato, guac → patty → sauce → sweet potato round on top.
Serve + enjoy!
