Sweet Potato Tots


Ingredients

Tots:

  • 2 lb Bako Sweet sweet potatoes, halved 

  • 1 tbsp nutritional yeast 

  • 1 tbsp avocado oil 

  • 1 tbsp cornstarch 

  • 1 ½ tsp smoked paprika 

  • 1 tsp garlic powder 

  • ¾ tsp onion powder 

  • 1 tsp kosher salt 

  • ½ tsp black pepper 

Dipping Sauce:

  • ½ cup mayo 

  • ¼ cup Greek yogurt 

  • 2 tbsp dijon mustard 

  • Juice from ½ lime 

  • ½ tsp paprika 

  • ¼ tsp garlic powder 

 

Directions

  1. Preheat oven to 425F. Line a large baking sheet with parchment paper. 

  2. Bring a large pot of water to a boil. Carefully add in sweet potatoes and boil for 18-20 minutes until you can insert a fork into them but they are still firm. 

  3. Drain potatoes and rinse under cold water. Once cooled and safe to touch, peel the skins. 

  4. Grate the potatoes and add to a large bowl along with nutritional yeast, oil, cornstarch, spices, salt, and pepper. Stir everything together until well combined. 

  5. Use a tbsp to form the sweet potatoes into tots. Arrange on baking sheet, making sure they are not overcrowded. Brush both sides of each tot with oil. 

  6. Bake for 20-25 min flipping halfway through until golden brown. 

  7. While tots are baking, whisk together all sauce ingredients until creamy. Cool tater tots a bit before serving with dip. 

  8. Garnish with parsley.
