Sweet Potato Tots

Ingredients
Tots:
2 lb Bako Sweet sweet potatoes, halved
1 tbsp nutritional yeast
1 tbsp avocado oil
1 tbsp cornstarch
1 ½ tsp smoked paprika
1 tsp garlic powder
¾ tsp onion powder
1 tsp kosher salt
½ tsp black pepper
Dipping Sauce:
½ cup mayo
¼ cup Greek yogurt
2 tbsp dijon mustard
Juice from ½ lime
½ tsp paprika
¼ tsp garlic powder
Directions
Preheat oven to 425F. Line a large baking sheet with parchment paper.
Bring a large pot of water to a boil. Carefully add in sweet potatoes and boil for 18-20 minutes until you can insert a fork into them but they are still firm.
Drain potatoes and rinse under cold water. Once cooled and safe to touch, peel the skins.
Grate the potatoes and add to a large bowl along with nutritional yeast, oil, cornstarch, spices, salt, and pepper. Stir everything together until well combined.
Use a tbsp to form the sweet potatoes into tots. Arrange on baking sheet, making sure they are not overcrowded. Brush both sides of each tot with oil.
Bake for 20-25 min flipping halfway through until golden brown.
While tots are baking, whisk together all sauce ingredients until creamy. Cool tater tots a bit before serving with dip.
Garnish with parsley.
